Well, relatively healthy. It's how we justify eating so many in one sitting ;)
A family friend shared this recipe with us when I was a kid and we still use it 20+ years later. That just goes to show that this recipe is a keeper! We did make some modifications, so I've written it out how we like it.
Healthy Cookies - recipe courtesy Cathy, an old family friend
Ingredients
1/4 cups butter, room temperature
1/2 cup dark brown sugar
1/2 cup granulated sugar
2 eggs, room temperature
1 tsp vanilla
1.5 cups flour
1 tsp baking soda
1/4 tsp nutmeg
2.5 cups oats
1/2 cup wheat germ
1 tsp cinnamon
1/2 grape nuts
1/2 cups currants
1.5 cups chocolate chips
Directions
Preheat oven to 350 degrees F
Combine butter and sugar until smooth and creamy
Add eggs and vanilla, mix
In a separate bowl, whisk together dry ingredients. Add to wet ingredients and mix until just combined
Hand mix in grape nuts, currants, and chocolate chips until evenly distributed
On a parchment lined cookie sheet, scoop dough by 1 tablespoonfuls
Bake 9-10 minutes, until lightly brown around the edges
Let cool slightly before transferring to wire rack
(These are actually best eaten when completely cooled!)
