The only flour tortillas you'll ever need

I don't think it would go over well if I walked in with store-bought anymore



I could live off of cheese quesadillas. It never occurred to me that I could make them even better with HOMEMADE TORTILLAS. If you're like me, the thought of making them always sounded scary and complicated. Then the 2020 pandemic hit and I was like, I can do anything! So I found this recipe and BAM... best tortillas I've ever had.


Are you an El Torito fan?

Not to be confused with El Torito Grill. Growing up my family went to El Torito often, where they'd make tortillas from scratch right in front of you. Then they'd serve them to you with orange butter. Trying these homemade tortillas had me craving orange butter.


You know what else is delicious with these? Nothing. Everything. I mean, eat them plain and you're not missing out on anything. But if you must eat them with butter, I recommend Benecol. If you haven't had it, it's basically dessert butter.


So, without further ado....

Yield approx. 12 tortillas


Ingredients:

  • 3 cups AP flour

  • 1 1/2 tsp fine sea salt (I use pink Himalayan)

  • 1 tsp baking powder

  • 1 cup hot water

  • 1/3 cup coconut oil (I use avocado oil. But I don't recommend a strong flavored oil. It changes the tortilla flavor)

Directions:

  1. In a large bowl, whisk together flour, sea salt, and baking powder

  2. Add hot water and oil and stir until a shaggy dough forms

  3. Turn the dough onto a floured surface and knead 1-2 minutes until smooth

  4. Form the dough into a round disk and cover with a clean kitchen towel. Let rest for 10 minutes

  5. Use a knife or pizza cutter to cut the dough into 12 wedges (or more for smaller tortillas), which I usually do

  6. Form into a ball and toll out tortillas to desired thickness

  7. Heat a cast iron skillet or heavy bottomed pan over medium heat

  8. Add the tortilla and cook for 30-60 seconds, until tiny bubbles form and golden sports appear.

  9. Flip and cook for about 30 seconds. Repeat and enjoy!!
